I love summer. I enjoy the long days, the somewhat relaxed feeling of "vacation" and most importantly, the abundance and plethora of vegetables and fruits. The key to good tasting dishes is starting with good tasting ingredients and during the summer, it is plentiful. I've been tasked with developing some "farm to table" recipes. Many friends have asked me for recipe ideas for their CSA (community supported agricultre) boxes. So, here are a few!
I love this bacon, corn, avo, tomato salad because there's nothing better than having each of the ingredients be the star, especially when it's prime season for these vegetables. The LOVE fresh corn when it's in season. The kernals are sweet, plump, juicy and crisp if you can get it at a farmstand or farmer's market, they are delicious! Tomatoes are also SO flavorful this time of the year. This dish shines because of the ingredients.
Tips for making this crispy bacon, corn, avo and tomato salad
I cannot emphasize it enough to use the freshest ingredients. The ingredients will do the work. It provides it's own color, texture and taste! Pickle the onion to take out any "sting" or "bite", marinate the tomatoes and before serving, add the avocado and lastly the crispy bacon!

Ingredients for bacon, corn, avo salad
Crispy Bacon
Crisp the bacon and cut it into half inch pieces to provide crunch and flavor. Cook bacon on a pan or in the microwave. Bacon crisps in a dry environment so keep the pan or bacon pan by removing discarding the excess rendering (melted bacon fat)
Avo
Ripe, cubed avo is used in this salad. If you are not used to cutting avocadoes, I highly recommend you watching the video to see a safe way of de-pitting and cutting the avo into cubes.
Seasoning
This salad dressing is made with cilantro, lime, olive oil and Sammy Wong's Nantucket all purpose seasoning. I like this dressing because it adds complexity in taste and texture to the salad with it roasted whole ground herbs. The fresh cilantro and lime gives that freshness that reminds us of summer days!

CRISPY BACON, CORN, AVO, TOMATO SALAD
Ingredients
- 6 bacon strips
- 3 ears fresh corn
- 1 jumbo avocado
- 1 Container variety of cherry tomatoes halved
- 1-2 Tbsp cilantro leaves
- 1 lime
- 1-2 Tbsp olive oil
- 1 tsp Sammy Wong's all-purpose seasoning
- 1/4 cup red onion diced
Instructions
- Cook bacon until crisp.6 bacon strips
- Place on paper towels to remove excess oil.
- When cooled, cut into 1/2" width pieces.
- Shuck corn and grill for 10-15 minutes on a 400℉ grill until cooked and slightly charred or char corn on an open flame of a gas stove.3 ears fresh corn
- When cooled, remove kernals from the cob.
- Combine diced red onion, cilantro, juice from lime, olive oil and Sammy Wong's all-purpose seasoning together and allow to marinate.1-2 Tbsp cilantro leaves, 1 lime, 1-2 Tbsp olive oil, 1 tsp Sammy Wong's all-purpose seasoning, 1/4 cup red onion
- Add halved tomatoes.1 Container variety of cherry tomatoes
- When close to serving, cut avocado into cubes and add to salad. Toss with dressing to prevent avo from oxidizing and turning brown.1 jumbo avocado
- Add bacon pieces and serve immediately.
