When my daughters were toddlers, they grew up with these "green french fries" and they LOVED them. I love these crunchy, blanched, marinated green beans because they are not only absolutely delicious, they are also so easy to make and convenient to have in the refrigerator to whip out whenever you needed to add a vegetable to your entree, take to a potluck or just as a plain, healthy, crunchy snack! I guarantee you that your family will LOVE them!
Tips for making green french fries
Beans
Use FRESH green beans. Some varieties have the string down the seam which needs to be pulled off while other variety are stringless. Remove the stem and the string by snapping off the stem and running it down the seam of the bean in one easy motion.
If you are picking your own beans, pick the beans that don't have large seeds. Larger seeds are beans that have been on the stalk longer and are not as fleshy as those with small seeds.
Cut and washed French green beans can also be used.
Cooking
Do not overcook the beans. To ensure that your beans are always crisp. Cook in small batches to prevent the boiling water from dropping in temperature and don't use beans that come out of the refrigerator. Allow the green beans to come to room temperature before cooking.
Ice bath
Immediately after blanching, place the green beans in a large bowl filled with water and ice cubes. This stops the beans from cooking, retaining their bright green color and crunch!
Marinade
The marinade is a simple soy-sesame dressing but the secret is Sammy Wong's umami seasoning. This brings out the flavor of the green beans. The easiest way to marinade these beans is to place it in a container with a tight fitting lid that can be shaken and turned upside down. Marinade for a few hours before serving. Sprinkle with sesame seeds and Sammy Wong's umami seasoning before serving.
Storage
Store in the refrigerator for several days.
