When growing up in South Africa, I loved going to "Pizzaland" and getting their chicken mushroom pizza. It had just the right amount of zesty tomato sauce that had this unique and delicious flavor, cheese that was gooey and just the right amount of chicken and mushrooms. Over the years, I've been trying to create a tomato sauce for a thin crust pizza that has an intense tomato flavor for the amount of sauce added to the dough that would result in a flavorful mouthful of taste and a crunch with every bite. I took a New York style pizza making class in New York. They showed me how to make a simple sauce. It was good, but something was lacking. My discovery...tomato paste and fresh oregano. This recipe is SO EASY and tasty. I highly recommend using fresh garlic and oregano. It makes ALL the difference.
Tomato PASTE has a concentrated tomato flavor. Brands of tomato paste do differ. I suggest you try various brands and decide which one you like the best. I personally prefer the flavor of the Cento paste. The Italian paste is made from San Marzano tomatoes which tend to be sweeter and more flavorful. When spreading the paste, you may have to use a spatula or knife. See video below. If you don't use all the tomato paste and want to keep it, I add olive oil to cover the surface and then cover the can with plastic wrap. It keeps for a while this way.

- ½ tsp salt
- 1 tsp fresh minced garlic fresh garlic is better than bottled
- ½ Tbsp fresh oregano Add more or less, depending on your liking
- 2 Tbsp olive oil
