Ever need something sweet after dinner but don't have the time for an elaborate dessert? I usually have ice cream in the freezer and chocolate chips in the fridge. During times like these, I would cut up some fruit, use a melon baller for a scoop of ice-cream and make a 30 second home-made chocolate fudge sauce and voila, dessert is served!
Being pre-diabetic, the quantity is just sufficient to satify that sweet craving but not overdo the sugar. A while ago, we had some guests over and I whipped out a simple fresh berries, ice cream and home-made chocolate fudge sauce for dessert. Without thinking, these bowls were filled with berries and floating on the top, was this tiny ball of ice cream with chocolate sauce.
By the reaction of my guests, I immediately knew what they were thinking! I started laughing because old habits die hard! Needless to say, this recipe is sufficient for a chocolate sauce TOPPING. If you prefer your ice cream to be swimming in a lake of chocolate sauce, you can increase the amounts accordingly. Enjoy and let me know what you think in the comment section.
Tips:
Chocolate does burn if heated too long in the microwave. I suggest that you use small amounts of chocolate in a small bowl. I usually melt my chocolate sauce (2 servings) in a ramekin and still have leftovers!
Watch the container through the microwave window. When the milk starts to bubble up, it is ready. My microwave takes 20 seconds but the timing depends on the power of your microwave.
When stirring, it will initially look like hot chocolate but keep stirring vigorously and a smooth sauce will develop. Do not overstir!
