Use noodles that don't stick together

shredded lettuce

julienne cut carrots

shredded cooked chicken
Peanut Dressing

peanut butter
Preferably without sugar and salt

rice vinegar

sesame oil

honey.
Can use sugar if you don't have honey

light soy sauce

chili sauce.
Like Sriracha

garlic

Salad Topping

Crushed roasted peanuts

Toasted sesame seeds

Instructions

Cook noodles al dente according to noodle cooking instructions
▢
Run under cold water to stop cooking.
▢
Thinly slice lettuce
▢
Julienne cut carrots lengthwise.
▢
Julienne cut cucumbers lengthwise.
Make Peanut dressing
▢
Chop garlic
▢
Chop scallion
▢
Combine all the ingredients for the peanut dressing into a blender
▢
Blend dressing until smooth.
▢
In a large mixing bowl, mix together noodles, chicken and vegetables
▢
Add peanut dressing depending on your taste.
▢
Toss salad
▢
Sprinkle with roasted peanuts and sesame seeds. You can serve this individually as well.
