VIBRANT MINT SAUCE

This mint sauce brings about the bright green color of mint. With a vinegar base, it's a great accompaniment with any lamb roast.

fresh mint

white wine vinegar
rice vinegar can be substituted.

sugar

sea salt
Instructions
By hand
▢
Clean mint leaves and destem.
▢
Place mint leaves in a small container with vinegar for a minute.
▢
Remove mint from vinegar and chop mint into fine pieces.
▢
Add salt and sugar and mix. Serve
By personal blender / chopper attachment

Clean mint leaves and destem.
▢
Add vinegar to the personal blender.
▢
Add mint leaves, sugar and salt.
▢
Blend and serve.
Notes
To prevent oxidation, mint leaves should be immersed with the vinegar before chopping. This will result in a brighter mint sauce.
